So today we are going to talk about a very good wholesome and healthy stock generally forms the basis of the foundation of French cooking.

well, I would say not just French cooking it's also important for any home cooking.

So guys today what I am going to show you how to make homemade chicken stock from scratch.

But before that you need to keep this in mind:

Basically, there are four things that really confuse us. Those four things we are going to talk about here first.

you should not be confused with it.

1) Stock.
2) Broth.
3) Soup.
4) Booyah

Well, a booyah and a broth are just the same things.

And the soup, of course, we all know what it is.

But what I am going to share the recipe today is actually stock.

So do not be confused while making it.

How To Make Homemade Chicken Stock Recipe?

Step #1.

So firstly you will take the carcass of the chicken. this is also known as chicken bones. You need to blanch the chicken in the hot and boiling water.

Heat a deep pan, boil some water. and put the chicken in the pan.

Remember, You will need to take chicken with bones for this soup. because the soup is more healthy when it is made with not just chicken flesh but also has the power of bones of it.

Because you know that the chicken bones highly contain gelatin. and it is very good for the body.

So you will take chicken with the bones for this homemade chicken stock recipe.

Step #2. 

Boil it for a few minutes. Now after some minutes, you will observe that there will be a lot of scum and impurities that will have actually appeared right on top of the liquid in the pan.

You need to remove that scum from the liquid.

Remember, it's a very important step otherwise your stock would generally turn cloudy in color and you do not want that, do you?

it has to be nice, clean and clear, and absolutely flavorful.

So you need to boil it for at least 5-7 minutes. and then switch off the gas.

Step #3.

The chicken bones are now ready to go straight in the stockpot.

Now move on to the main procedure and for that, you will need three very critical ingredients in the kitchen while making the homemade chicken stock recipe.

Now, these ingredients are classically known as the Mirepoix.

The Mirepoix technically has three ingredients.

1) Carrots
2) Onions
3) Celery

well, you do not need to get into any peeling or anything of that kind.

All you need to do is cut the vegetables right away without peeling them.

Cut the onions with the skin, with the root, and with everything in place. you need to cut it roughly and now this should be put straight in the stockpot.

Step #5.

After cutting the red onions put them into the stockpot.

The next thing you will add in the stock is some carrots. just roughly cut them into dices.

The final thing you need to add in the stock is some celery.

As I'm saying again you do not need to cut or chop it. you just need to do snip the celery randomly.

Step #6.

Now with the vegetables, you also be adding some water in the stock. and simply switch on the gas.

You will simply bubble this and boil this on an Absolute High Flame.

Now, one thing that is very important to note, while making this stock is that you always need to begin with cold water in the pan. never begin with the hot water.

Because of the cold water, as it starts heating up, it starts releasing a lot of flavor from the chicken bones. so you get nice flavorsome chicken stock.

Look, so far I've told you about three things

1. The water and its temperature

2. The cleaning of the chicken and the bones

3. The Mirepoix

Now I am going to tell you the fourth component and that is also a very technical component called the Bouquet Garni.

What is Bouquet Garni?

The bouquet garni has three ingredients primarily. and the fourth ingredient is actually subjective. some people use it some don't.

Now the primary three ingredients are Fresh Thyme Leaves, Bay Leaves, and the Stalks of Parsley.

Keep in this mind that you will not use a lot of parsley in the homemade chicken stock. recipe. just take a few stalks and that's it.

Well, technically what's done in the kitchens is that firstly you will take a thread, and you will get all these three ingredients together then you will simply bundle these up.

Actually, that's where the word comes in which is a Bouquet Garni which is nothing but a set of these three ingredients.

Step #7.

If you want you can also use it in this homemade chicken stock recipe. that is your personal choice. but I would suggest that you do not need to bundle the ingredients together.

Just take them and add these three ingredients separately in the stockpot.

Let me tell you that there is a fourth ingredient of the Bouquet Garni also. Actually, this is optional. but you can include this. and the ingredient is Peppercorn

By the way, I love using peppercorns in the stock. and I think you should be adding a generous serving of peppercorns in this homemade chicken stock.


Step #8.

After simmering for few minutes, now give it a nice and quick stir. And allow this to boil on high flame for a minimum of 15 minutes.

Now see your stock must be bubbling and boiling gloriously for the last 15 minutes. 


Step #9.

Now the time is to start skimming. the thin layer of the scum will have come on top of the stock. You will remove all the scum from this homemade chicken stock recipe.

Now it's very important because you want a nice and clean and clear stock. so this step is very important.

Here is a Pro Tip:

Well just as an idea for you in your own home kitchens if you want to make this homemade chicken stock recipe nice full-bodied and intense, you could also roast the chicken bones.

I know. I told you before that blanch the bones but as a second choice what you could do is roast the chicken bones in the oven at 200 degrees Celsius for 20 to 25 minutes.

Let it caramelize nicely and beautifully and your stock will further get an additional delicious flavor.

Step #10.

Now you need to gently simmer the stock for at least 40-45 minutes on low medium flame. do not forget to stir this homemade chicken stock in between.

After 45 minutes, if you will look at the stock, it will become a nice and full-bodied, flavourful, and delicious stock.

Plus if you will see there will be also some fat which will have been released from the bones.

Step #11.

That is the stage when you actually need to turn the gas off. Yes !! Allow this stock to settle for at least 10 to 15 minutes and then strain this or sieve this.

Now I don't know if you've noticed properly or not but I have not told you to add any salt while making this homemade chicken stock recipe.

Actually, I deliberately have done so because this stock is one of the used for multiple purposes.

whether you want to add it to GRAVIES, to SOUPS, or to STEWS. the salt should be added at that stage as and when required.

So remember, at this stage do not add any salt in this homemade chicken stock recipe.

Step #12.

Now you will strain this well. with this, your full-bodied and flavorsome chicken stock is ready to be used for multiple purposes.

This can also be frozen and kept well for further use. All you need to do is let this come down to room temperature then transfer this into containers that are freezer friendly.

One More Thing

You will realize and notice that on the second day, the stock will develop a thin layer of fat. it will come on top of the stock.

you just need to skim it off on day two and your stock is ready to be used.
